If pasta is "al dente", then it's still firm, but soft (as in, not mushy). Actually, that applies to any food, but it's usually only used to describe pasta.

It means "to the bite" (or "to the tooth"). It is pasta which is cooked so that it is just softening. Hence its appositeness in a thread where people are signing off with a word describing varying degrees of hardness.

Actually, I got "To the Tooth" when I translated it from Italian to English, but I thought it must have been crazy because it sounded so odd, but it must have been correct.

Found somewhere (I was too bored to translate from spanish to english):
"Al dente is a fancy term for pasta that's fully cooked, but not overly soft. The phrase is Italian for "to the tooth," which comes from testing the pasta's consistency with your teeth."
