Do you have shredding knuckles?
Don't have any but didn't need it with this. One hour in the pressure cooker and it was falling apart straining it out. Tossed the chunks into the pan and "shredded" with the strainer. A quick fry while thickening up the sauce in the pressure cooker, re-combine and stir.

Next time I need a lot less salt but other than that, it was fantastic.

That does seem like an awful lot of salt. Did you double the recipe or use half of the butt?

Thanks for linking the recipe. We received an instant pot for Christmas and definitely looking for more recipes.

Half the butt. The rest is in the freezer.

This is about as easy a recipe as you can get, provided you cut down on the salt. :)

So it really was just a lot of salt then. I thought you might've doubled the recipe, and salt shouldn't be doubled along with everything else.

I wonder why it calls for so much. Perhaps they meant kosher but didn't specify.
 
Not sure how salty TBs were, but having had lots of various people's carnitas, some tend to be really salty.

These weren't terrible but there is too much. Needs to be cut in half. The rice helps immensely.

And even after all of us ate last night I have probably four and a half pounds left. :lol:

My first attempt to air fry a potato. I slathered it with olive oil and then salted and peppered it. Then I cooked it for 45 minutes at 390°, turning over half way through.

Then came butter, bacon, cheese, sour cream, and more salt and pepper. I always eat baked potatoes, skin and all, but wow, the crispiness of the skin was awesome!

I thought six pounds of carnitas was a lot but it was gone yesterday. That means it was time to cook again. Palak paneer this time.

The recipe I followed had NO flavor so after a lot of doctoring, it was pretty good (ironically, it needed a lot more salt than advertised. I can't win. :lol:). Apparently others thought it was better than pretty good because the double batch is one bowl away from being gone.

Guess I'm cooking again tomorrow, too...

Skin and all is the way to go. I usually cut mine in half, give it a couple topping, and just pick it up and eat it. One half at a time. If I'm going toppingless, I just pick it up and eat it like an apple. I love potatoes.
 
I like to pull out all the "meat" of the potato, ther load up the skins with some butter, sour cream and bacon bits.

Today though... today we cook steak!

I cannot stress just how good sous vide steaks are! Once I get a proper vacuum sealer, I may also try my hand at doing some dry aged ribeye. This is getting to be quite the addicti... hobby...
I'll edit in some after pictures once it's all said and done, but not yet eaten.

There is not an emote on this page for the face I made, but it's pretty close to the one I made after seeing TBs last post. Something like :ill:... I've never been big on Indian food though.
My wife recently picked up some green tea mochi. I love green tea. It does not make a good ice cream flavor.

If I were to link it to any particular cuisine, I'd say it's more Thai than Indian, but I'm trying it for its anti-inflammatory properties to address my knee issues rather than for any "cuisine-y" association.

As for the palak paneer...I mean...it's spinach and cheese. How can you have a problem with spinach and cheese?

My mom used to force us to eat canned spinach. I have grown to have a healthy, or perhaps unhealthy? disdain for the stuff. I'm not really into curry's in general either. I have to admit I am fairly "basic" in my tastes. Pasties, grilled slabs of meat, steamed buttered veggies, etc. My few exceptions being Mexican and Korean foods.

I can appreciate having an aversion to things, particularly when it's linked to early memories. But that's the great thing about cooking--make what you like.
 
Yesterday I didn't eat any nuts. :scared:
