Yesterday was my wife's birthday and we had Mexican food.

Grill Roll Tacos:

Chicken thigh, spinach, colorful peppers, onion, curry and cheddar cheese, grilled wrapped in two tortillas, salsa sauce, sour cream sauce, Mexican beans and rice.

God damn, that looks fantastic! I want to try and make that.

Meanwhile... I had Taco Bell two days in a row and I feel sluggish. The Crunchwrap is certainly not SUPREME.

Beans on toast with scrambled egg. One of my all time top comfort foods.

I have to add Philly Cheese to the eggs though and a little grated cheddar to the top of the pile.
Yep, my only regret was that there was no cheese in the house.

Tonight's dinner: Simple Ramen Noodles with mixed vegetables, mixed with the seasoning and pepper. Technically tried this before but the previous "Mixed Vegetables" I got was just 90% Broccoli with 1% Carrot and 5% Cauliflower (No hate against broccoli, just wished there was more of the other veggies). The one I had tonight has carrots, green beans, peas and corn.

For breakfast, I'm eating some grits, hash browns, a couple pancakes and a bagel. With some orange juice that does not have the pulp in it.

Chick-fil-A is officially opening on campus tomorrow but they had an early opening for faculty and staff today.

No pictures of the brown on brown on brown meal (chicken patty, bun, chips, cookie and sweet tea) but I got some new companionship for my desk.
