Why Gran Turismo Sport?

I think this is likely to be the first GT game that I wait for the reviews/player feedback. Gt5 and GT6 just werent up to par for me, each with their own issues. I really hope PD can rediscover the magic of the earlier games, with a huge, well thought out 'Gran Turismo World' mode, and actual races rather than the awful chase the rabbit stuff from GT6. If GTS turns out to be online focused (which I assume, rightly or wrongly, it will be) then I'll probably pass on it anyway. GT for me will always be about the offline career mode and car collecting. Only time will tell!

I'm pretty sure they said that there will be offline modes but certainly they will focus on the online component.

Why is it called Gran Turismo Sport and not GT 7?

Because they didn't want to call it GT7 Prologue, that's why.
