I came up with the idea of using photogrammetry software to try and recreate tracks from games, as exporting them from things like gran turimso can be a pain, if not impossible.

Personally I'd PG the track surfaces and a few reference points, then do a much lower resolution pass for the environs. Set your zero at a visible point on the S/F line or similar. With that said I'm pretty sure photogrammetry isn't the answer here. You'd be as well using the DEFRA lidar set for a layout and work from there.
EDIT: Even the 2M mesh looks enough to set a layout, insert your PG model of the track ribbon into there.
It's massive overkill to PG the remainder of the asset. If you're looking to rip then work with an original model. If you're looking to create then the bulk of the model won't need highly granular resolution.
