The rain effects were the biggest noticiable change for me on the ps5.Im sure i remember there being a bit more spray at launch,maybe not remembering correctly though.Yeah it's clear as day that PS4 version is holding back PS5 version of GT7 and what's even worse update after update they're removing small effects from game just for the sake of PS4 version running smoother...
When you look at pre 1.04 PS5 version of the game and now the difference is huge...
80% of all small effects are gone now and sadly those effects make game 100 times more immersive...

They have also removed some small details on some tracks, which are now visible only in replay/photo mpde.
