There is one new unknown fantasy track that we need to keep on our radar at least. From Famines interview at GameCom, one that might exceed Trial Mountain & Deep Forest. So I'm assuming it's a unknown mountain course.

"Kazunori was visibly awed by this question and spent nearly a minute thinking of an answer. “Deep Forest”, he said. I countered with “Trial Mountain?”. His next answer was complex – the team haven’t revealed anywhere near all of the tracks yet and there may be a fantasy GT5 track which exceeds Deep Forest in his estimations, and Trial Mountain in mine."

What if it's what seems to be a "Special Speed Highway" instead?
(as seen from the weather effects video).

But it's going to be a mountain track, could it be some kind of fictional Touge/mountain pass course?

Complex String maybe? that would exceed every fantasy track. Maybe it's been reworked into a completely different setting.

It could be, but I was just assuming, because Kaz has compared it to Deep Forest & Famines Trial Mountain.

There was a Japanese track I remember seeing on I think old Wikipedia track list of GT5, but I dismissed it, since there have been no confirmation of it.

Complex String is the kind of track you would expect a manufacturer to have in their back lot for testing purposes. I doubt anyone would make a track like that for actual racing.

High Speed Ring, on the other hand, would be great to see built. Even if it doesn't have the bridge and tunnel sections, the design of the course would make for some absolutely great racing. Long straights, sweeping corners, and gradual banking means that no one car will ever be faster for every lap save for skill differences.

el capitan is it back or that psp footage in the redbull trailer doesn't confirm it?.. i love that track.

With it being displayed in a GT5 trailer is pretty much confirmed, though those images appear to be from PSP.

What does any of that have to do with the quote from Kaz about a Fantasy GT5 track exceeding that of Trial Mountain and Deep Forest?

I'd say fake, and also inaccurate (a few new tracks missing). I bet the person who made it reads this thread.
It's tracks derived from GT5P weather locations + GT5 tracks + GTPSP/GT4 tracks.
I made up something similar a few weeks ago here.

Because the original question was: "Given the time, money, space and resources, which fantasy Gran Turismo track would you create in the real world?"

Kaz answered Deep Forest. Interviewer questioned "Trial Mountain?" Kaz pondered and failed to answer mentioning other fantasy tracks.

You suggested Complex String along that line of questioning. I made a statement regarding that suggestion and responded with my own suggestion.

The "official one" for this thread has not been updated, but I made one:

Reverse versions are not listed there as tracks or variations (they have never been counted as such by the way, as far as I know).

Anyway - this is a list of tracks I keep track of.

Blue - confirmed tracks. Some pages ago I posted a subset of the list containing only these ones.
Dark Red - tracks from GTPSP - will most likely be included in a way or another (rebuilt from scratch or as "standard tracks")
Green - tracks from GT4 - as above
Gray - highly possible circuits due to various clues, but not confirmed yet

If you're assembling a list of locations rather than unique tracks (as I previously thought and as I did with the list above), then I think you might want to merge together Special Stage R5 and R11. It's not 100% confirmed yet, but it appears that in GT5 there will be several tracks with a "Special Stage" scenery, including a long highway. Also Special Stage tracks from previous games all felt like having a theme in common, as if they were from different areas in the same location.

Smokey Mountain was present on GTPSP, and it was playable, but using cheat codes. 2 other tracks were present and playable, and many other tracks like Complex String, Hong Kong... had all the data but weren't playable. I don't know anything, but, why would PD waste their time converting old tracks if they weren't going to use them, but didn't reveal them in GTPSP to avoid spoiling us?
