You can and will learn to love the track if you give it time.
I'm still nowhere near mastering the Nürburgring, but I'm really starting to enjoy driving it.
Just start with a really, really, really slow car (think something that'll barely make it up the hills). Drive around, enjoy the scenery and learn the basic curves and visual markers while having the occasional peek at the map as another visual aid.
Next take a faster car and learn about the bumps, the ideal driving line and the parts where you really have to concentrate to stay on the track.
Now drive different cars with different characteristics (with power up to about 300 hp) on the track and learn the different elements that make this track interesting.
Start with the easier cars, like an S2000 or any other car you feel good in.
This worked for me because I noticed that finishing the track without sliding on the grass (even with a very low powered car) gave me the feeling I really accomplished something. Driving it with a faster car gave that feeling again.

Ok, the AI spoiled it for me more than once, but it has managed to do that on almost all other tracks, so I'm not going to let that spoil my ride (although it usually spoils my lead
