I've never had an issue with DLC cars or tracks with triple-monitors, everything is simple and works fine.
As for the custom circuits only working on the center monitor, this is because the clients don't have the information for the custom tracks on a disc to pull from. If you go to one of the baked-in circuits that come on the disc then each machine pulls the track info from it's disc and communicates with the other two machines to sync them up. On a custom circuit only one machine has the info so the client machines don't know what to do. Yeah, you can share the track with the client machines but I think the code is different enough that the little PS3 can't make it work out. I doubt this feature will ever be available on multi-monitors.
EDIT: I believe the server machine automatically provides an IP address and you just type that address into the clients, it's really simple. 👍
