DISCLAIMER: Although the aim is to provide up to date information, the status of information can change over time and any of it may currently be false due to what we do not know. I don't work for SMS. I'm some random guy sitting at home with not much else better to do.
Since it's going to be discussed anyway, it probably makes more sense for it to be in a separate thread than the Suggestions thread. I/We expect it will be the third iteration but @IanBell never specified what it was so I'll keep it as unconfirmed. Maybe it's a bit early. It probably won't be released for a few years but we have information that the next iteration has been signed off.
And I enjoyed posting about the stuff related to PCARS2 in the pre-release. I mainly copied the FAQ. Expect this to be updated a billion times.
FAQ:
What platforms will it be released on?
When will it be released?
What do we know in terms of a car list?
What do we know in terms of a track list?
Can I see some screenshots?
Can I see some gameplay?
What features have been confirmed for Project CARS 3?
Potential Content Discussion
Also, have a look at the Project CARS website for other details about the game. @Tank621 has a thread on their forums as well if I miss anything...or you're bored enough to read something else.

Current generation on PS4, XB1 and PC.
When will it be released?
Summer 2020.
What do we know in terms of a car list?
There isn't an official announcement page so I can't quote anything from there. But if the same idea from PCARS1-2 happened, expect most to come and replacements to come for those which require it. For example, I speculate the M6 GTLM (which replaced the M3 GT from PCARS1) will be replaced by the M8 GTE. I'll link a car list thread when one is created.
What do we know in terms of a track list?
Again, we don't know. But all the tracks from PCARS1 featured in 2. So based on that, I would expect the same to be the case for the next iteration but we don't know yet. I'll link a track list thread when one is made.
Can I see some screenshots?
Have a look at the official Project CARS Instagram and Flickr for great screenshots. They currently show PCARS2 images but when they want to, they'll use PCARS3 images for marketing. They'll feature here in some way.
Can I see some gameplay?
Go to the future and find some. We don't have any. @IanBell will show it when he's allowed to. He's even said he'll show it here first.
We'll show the first gameplay vid here as I like you guys a lot.
What features have been confirmed for Project CARS 3?
Well. At least we can show something here with @IanBell discussing PCARS3.
I'll let you know that pCARS3 will be more 'focused'... More 'fun'... We went to insane lengths with variation in pCARS2 and with that comes infinite balancing issues. We've learned a lesson here and although we have no intention of reducing content, we know what we need to fix, where we made design decisions that were, let's call it, 'sub-optimal'... pCARS3 will be more of a spiritual successor to Shift, but with all of the sim goodness everyone appreciates... The key focus though is on fun and not biting off more than we can properly chew and digest.

IanBellI'm not saying I wouldn't like Mosport in the game though. It's one of my favourites.

Japanese Content
Yes. Working hard on it. If I may say so the licensing issues here are 90% of the problem. I'm not sure if it's a language or a cultural or a whatever issue it is but when we sign a deal with Japanese companies they are always solid, trustworthy and fair. It's getting to that stage that has always been a challenge. When the Japanese come on board they tend to stay the course and are amenable and flexible ongoing. Maybe it's our issue, but we try. We try hard...
Manager from Ginetta
@jake2013guy - I bumped into a Manager from Ginetta at Brands last week and had a chat with him about racing, gaming and Ginetta. He couldn't confirm anything, but said he was hopeful that Ginetta would feature in more games in the future (I have no idea what these could be). I asked about historic models (as that is my main interest) specifically the G4 and G10. I got the impression that inclusion of the G10 in a future game is likely (the Ford 4.7 litre V8 powered car from circa 1965 - the FIA refused to classify it as a GT after its debut win - presumably due to low production numbers).
He didn't make any positive noises about the G4 - I think that car was originally included in GT5.
