Haruhi Suzumiya (FF through endless 8, get to Disappearance)
something GITS (I'd say original movie - I'm sure you have this one covered!)

Edit @ Loli: 00 is not terrible. And a "must see" list should include things which give an anime viewer a good foundation in anime, covering all the major bases. And most anime fans will agree that if you haven't seen any Gundam, you're missing something big in anime. You don't have to love it, but you have to watch at least some of it to know what it is, at the very least so you can tease Gundam freaks.
