Chicken Noodle Soup

That soup looks great. I used to make that but I would use seeded and ribbed jalapenos in the mirepoix instead of celery.

It was hot enough to make your nose run and your head sweat, but not so hot that it burned your mouth.

It's been so long, thanks for reminding me. I'm off to the market tomorrow to buy a rotisserie chicken!

My daughter doesn't handle spicy well. She proclaims that it burns and ceases to eat it. I did have some southwest chicken soup at a hospital cafeteria a week or so ago.

Precooked chicken? I buy mine raw. You toss the chicken in boiling water with seasonings so that you cook the chicken while making your own soup base. In my case I then boil the base down a bit so the flavor becomes stronger without adding salt.

Not that your way is wrong. 90% of the recipes online do it your way or by using canned chicken. I just don't have that convenience. I wish I could have bought a rotisserie chicken. It would have cut 30 minutes off the cooking time.

When I say "from scratch" I really mean it. I had half an onion, two carrot sticks, three celery stalks, two chicken breasts, half a bag of egg noodles, and fresh sprigs of thyme and oregano along with just a couple leaves of sage. I stuffed the herbs into a tea infuser ball and hung it on the edge of the pot so I could remove the leaves, which would have added vitamin K that interacts with one of my meds and have been an excuse for my daughter not to even try it. I did toss in a bit of chicken bouillon to boost the flavor, but I make that myself too.

End result: "Daddy, this is good, good, good. Best dinner ever!"
 
Too hot to make or eat, but had to eat something. Salad time. I've been eating a lot of salad lately. It was romaine lettuce, baby leaf spinach, cucumber, radish, tomatoes, carrots, snow peas with smoked turkey pieces.

I've had rabbit and I've eaten rabbit, but I've never had eaten rabbit. (Ew.)

Currently eating the Wasabi Iso Coated Peanuts and Wasabi Nori Blossoms that my wife won't eat from the bag of Kirkland Rice Crackers with Nuts snack mix from Costco.
 
Few things in this world better than good head. Had the Black Marlin with apple pie middle of last week--sharp cheddar on top [of the pie] melted and darkened with a blowtorch--it was out-of-this-world. Alaskan or Stone smoked porter is a must-try if you like that style, with smoke-kissed malts. Rarely do I get too far from IPAs and RIPAs but I gladly do for the Stone. (Incidentally, their IPA does nothing for me.)
 
I'm a Stone fan, and I love their IPA. I still have some RuinTen in the fridge. I've had their Smoked Porter and posted a few pages ago. Great stuff. I would love to try more Ballast Point, but just don't get enough of it in my local area.

Dinner, was as epic as breakfast. Making up for not eating much the last few days now that the weather is much cooler. Since so much food was pilling up in the fridge, made a 'Leftovers Meal' for dinner tonight. Tri Tip, Smoked Turkey, Corn, Stuffing and Cheddar Cheese Potato Pancakes.

I'm partial to Ranger from New Belgium (of Fat Tire fame) and their use of Cascade and Centennial hops. I like some malts to go with my hops so Ruination isn't my thing. As a Stone fan surely you know Arrogant Bastard--that is one big brew.
 
Made this over the weekend and it was delicious! Fried Cherry tomato omelet with bbq smokey links. I put Stubbs bbq sauce on the links. Also added a little spinach and Mrs Dash.

It's 10.45pm and I'm still eating. :ouch:

Worked out this evening and I'm always very hungry when I get home from the gym.

Cheese, crackers, raisins, chicken filet, cashewnuts.

I am trying a new dough recipe that does a good thick crust. It went over well.
 
Last night's dinner was over half of a fried chicken and had some potato salad with bacon bits on the side.

I was a little hungry. :lol:

For the last 5 days it's been Korean street food, crawfish BBQs, falafel burgers, full english breakfast wraps, chilli fried corn and over priced beer. Gotta love festivals! :D
 
I quit using Velveeta a long time ago, even before my sodium issues. A soft cheese that can sit on a shelf like that is not cheese. That's not even normal for American Cheese. To top it off, one of the main ingredients is milk fat. That is fattier than pure butter. They are essentially just mixing in oil

All that said: It is delicious.

I have found that by using a cream cheese base I can create a similarly creamy cheese sauce without the bad stuff, and I can make it even healthier using the cream cheese made with Greek yogurt.

The Velveeta alternatives came out online back in January/February, when the media had a minor freak out over rumors of a Velveeta shortage.
