My neighbors wife made me some chicken salad that I have been addicted to for the last week. So over the weekend I decided to try and reproduce her recipe without actually asking for the recipe. Mine is not quite as good but its close.

Made using zucchini and eggplant instead of noodles, homemade sauce using fresh tomatoes from the farmer's market. Basically, everything but the cheese was made from scratch.
MMMM lasagna! One of my favorite meals!
 
Chicken salad with pasta and peas? That's new. I'd call it grilled chicken pasta or pasta salad with chicken.

As for me: Taco Tuesday!

Work is trying this new Better Bites program in the cafeteria. It's just feel good BS but it lets me know that once a week I might actually be able to have something other than salad.

Today's was Savory Grilled Chicken with Orzo and Mixed Vegetables, a side of Sautéed Green Beans, and Blackberry Cobbler.

Dinner was a concoction using random leftovers.

Roasted Pepper Taco Bake

I roasted some Marconi and bell peppers on the grill, then I sliced them to lay flat and layered them in the dish. I mixed leftover taco meat with cheese, black olives, and onions and spread that on top of the peppers. Then I did a layer of fresh mozzarella. That was followed by another layer of peppers, and topped with low sodium smoked provolone and salsa.
 
At the moment, nuts (cashnuts). Chestnut crackers with cheese (only two because I need to lose visceral fat).

Last night was my mother-in-laws birthday dinner. Just steak. Nothing special.

Dessert was Baskin Robbins ice cream cake.

Dinner tonight was a Quorn madras curry, with vegetable pakora, and a bottle of cotes du rhones village (room temperature this time).
 
Had Moussaka today and mixed some emmentaler cheese with it. It was not bad, the cheese/moussaka combination.
