This is what I don't get about PD. They spend all this time modelling these places and showing them off in trailers, but then they don't even put them in the game. Why not make them photo locations?

Another good example was that parking garage in that Prologue video that you could only see once after downloading an update, I believe. Where has that gone? I'm sure many people would love to take some photos in that place.

Unless I'm mistaken and the way those videos are designed don't follow regular modelling procedures and they're not able to be used the way they are. But as far as I can tell and from what I remember, they look like in-game assets.

You're talking about Piazza del Campo in Siena. Interestingly, it stayed as a photo location.
 
But in the pic I posted the wind tunnel has an SLS AMG and the wind going above around and under in a different way to the FT-86 G Sport video ... Maybe a new trailer with this as a scene sparked by the 'new aerodynamics' ?
 
Or that could be the new aero tuning feature that comes with the KW Suspension 7 posts tuning feature mentioned before :) So, now we can see the changes in air flow with different aero settings. We might see differences even with different shaped rear wing, installing canards, front aero, and rear diffuser.

Not really, the car is still in the development phase. There is no final production version for Polyphony to even model and we are not sure if Polyphony still has a good relationship with Ferrari s.P.a or if they are relegated to waiting for a Ferrari model to appear at a local dealer/seller/owner like many game developers have had to do.

The F12berlinetta seems to be a shoe-in since both Forza's Turn 10 and EA's Ghost Games/Criterion Games already have a modeled version in their games (Forza Horizon/Forza5/Need For Speed Rivals) and its absence would make PD look a bit silly. Not to mention the Kaz's Twitter thread (in the GT5 section oddly enough) showed that Yamauchi has been to Maranello this year which is after F12berlinetta production had started.

GT quattro? Interesting. Maybe it's Audi's Vision Gran Turismo concept?

It's a proper Audi concept that's due to be officially showcased soon (if not already).
