You do know that there are possible limitations right? I'm no game developer but I'm pretty sure these things aren't as easy as 1, 2, 3, even though they would be nice features to have.
I absolutely agree but if setting custom fields in a game is that difficult then we haven't evolved much past swinging from tree to tree...You can already semi do this through bucket options but it's so limited ..Total free play options is the only thing missing in forza and they know it...But let's make custom clothing??...In a racing game??...Really??

With buckets you can achieve this. If you select two buckets you'll be able to have two/three/four specific set of restrictions that can allow for effectively multi-class racing, manufacturer battles, spec versus etc.

You can do this through Grid Ordering by Best Lap (of the last race) and the ability to change scoring types. (Check the dialog box on the right for confirmation)

Y'know, I never really explored the lobby settings much in the past but looking at them now, I'm realizing that it's actually surprisingly flexible when you know what everything does. Certainly not as elegant as the Blueprint system, but there's actually a really good amount of potential in how things can be setup.
Is anyone else having trouble setting up multi-class races? A few nights ago I tried setting up 4 classes with four different Skylines/GT-Rs, but the top class for the R35 ended up being random early 2010s supercars. Earlier I tried doing 2 classes of Early Prototypes and GT Revival (and later the Hoonigan Porsches) around the Old Mulsanne version of Le Mans, but I could only get the Early Prototypes to show up.
Here's an idea I tried earlier that actually came out to be pretty interesting, so I decided to make a full event out of it:
Friday Night Knockouts
A series of night races, roughly 25 miles each, with each round taking place on increasingly shorter tracks. Furthermore, every round the field shrinks by three drivers. If you finish in the bottom three of any round, you are eliminated and must start over from the beginning!

Other notes: You can use other divisions or grid ordering if you like, I just picked Sport GT since it has a large selection of cars and produced a more diverse field of AI vehicles. Random grid order was chosen to give some more variety and challenge at the start of the race.
I set the number of opponents to 5. After that, I made two player buckets. Bucket 1 was just me. Max number of players was set to 1. I set <Power to 115HP for the first 2 races and 100HP (the lowest I could set it) for the 3rd race. Bucket 2 division was set to 'Major Micros'. Buckets were not scored independently, and were not grouped together on the grid. Grid was set to Standing, Ordering set to PI, and Bigger Is Better set to Yes.
20 Laps of Le Mans Wet with the 908 HDI Team Total against 24 Drivatars in 3 groups. 8 LMP1, 8 LMP2 & 8 GT Cars. Started in thunderstorm before going to heavy rain on lap 7 and finishing off with dry weather on lap 16. Track fully dried up on lap 19.
Was a good race up until lap 16 when the only car I was really racing, the R15 TDI, went in for a pit stop which gave me an easy win
