I've noticed that when I'm Bobbing, setting the racescreen to "Live Timing" my ps3 stays much cooler, the fan barely comes on and the warm air coming out of it is not even warm, unlike when I'm driving Aspec.

Give it a try, maybe it will save your fatty PS3.

That's really a good idea. Since the PS3 doesn't render that massive amount of poligons on screen, the GPU and the CPU don't get busy and produce heat.

Another good idea is to stand your ps3 on end so the heat rises directly out.
GT5 seems to be gentle on the PS3. Some games cause the fan to come on more often and it can get pretty loud. I'm using an launch model from 2007.

Apparently, if you put it on the driver select screen (with no graphical movement) you save even more.
