Lunch

* Home made pumpkin soup

* Spinache with white beans and tomato.

* Some herbs (curcuma, salt)
 
Didn't plan on it but I'll be eating a lot of chicken this week. :lol:

Last night was a couple baked chicken thighs with McCormick grillmates roasted garlic and herb seasoning, with cheese bread and tomatoes.

Tonight will be the other half of the southwest seasoned rotisserie chicken from Target from Monday night. plus whatever I can find for a side.
 
Got home from work today and made a green pepper puree, and marinated some chicken in it along with some chili garlic sauce and lemon juice. Then soaked some potatoes while I slept and grilled those up too. Just seasoned them with black pepper and garlic plus a little of the lemon juice I had left.

Had very limited time to cook last night so threw this together. Made enough for 2 meals.

Last night I had some grilled chicken breast tenderloins with a chili lime glaze and some cilantro-lime rice.

I feel like I should post chicken and rice, too, but I had homemade peanut chicken with GF black bean noodles, instead.
 
Made a lovely seafood pie earlier. Shrimp, Salmon and Alaskan Pollock in a white sauce with sweet potato mash on top, was pretty delighted with how it turned out.
 
After a long (and hot) day, I'm having a cold Somersby cider. And it's actually tasting like heaven.
 
Made my own spin on scrambled eggs Sunday. Forgot to post the pics. Turned out delicious!

-Scrambleed eggs
-1/2 Avocado mixed in with eggs
-Spinach
-Swiss cheese
-butter
-Fresh mushrooms cooked in olive oil
-Cherry tomatoes cooked in olive oil
-bell pepper
-Lime juice
-Seasoned with Mrs Dash.

Last night I found some tilapia fillets in the freezer that I got at Target a while back. Pan fried them with a quick rub I threw together. Had some Zatarain's yellow rice and creamed corn with it.
