Got home from work today and made a green pepper puree, and marinated some chicken in it along with some chili garlic sauce and lemon juice. Then soaked some potatoes while I slept and grilled those up too. Just seasoned them with black pepper and garlic plus a little of the lemon juice I had left.
Made a lovely seafood pie earlier. Shrimp, Salmon and Alaskan Pollock in a white sauce with sweet potato mash on top, was pretty delighted with how it turned out.
Last night I found some tilapia fillets in the freezer that I got at Target a while back. Pan fried them with a quick rub I threw together. Had some Zatarain's yellow rice and creamed corn with it.
