Did a quick test, 2-3 laps at Daytona with each car that I had already on hand. I'll share my results/thoughts if anyone is curious. In the order I drove them:
Shelby - 2'10.4 (only managed 1 spin-free lap out of 4!)
Jaguar - 2'10.2
Corvette - 2'11.6
Cobra - 2'09.4

With proper practice and work on the gearboxes, those times should come down some. The Shelby might have the most room for improvement, I had trouble keeping it pointing forward and become a little cautious coming out of corners. The Jag was easy to drive and is probably the quickest on the straight. Corvette is very stable and was quicker in the infield than the Jag and Shelby, but was a slug on the straights (a six tenths advantage over the Jag was lost, and then some, in the last three sectors). Corvette should be very good on tracks like Laguna, but with the high-speed nature of the schedule, it could struggle elsewhere. The Cobra was the fastest in the infield and could just about keep up with the Jag/Shelby on the straights, the best car over one lap for sure and not too tough to drive. I don't yet have the Camaro.

I'm going to do longer runs tomorrow to test tire wear and fuel economy.

Fuel runs might change your choice, edited your times by the way ;)

FYI 2:11.0 in Corvette.
 
Yeah, this is just very preliminary sort of testing. I was hoping to be able to cut out a car or two with this before longer testing, but I don't think I will. The only thing I'm pretty sure of is that Dax will be on pole at Daytona if he makes it.

2'11.0 or better in the Corvette could be very well be possible. I only did 3 laps with that car without pushing to the edge and, as I said before, without fine tuning the gearbox.
