All cars are premium in the demo because they aren't going to showcase cars that don't have a cockpit view at an E3 demo and one of the largest out of them all. Could you imagine showing an 05 Corvette with black bars? Or how about a Pugeot 908 with black bars? Kind of embarrassing.
There are ROAD cars that are Premiums, but can't be deformed, and I would think it is 100% safe to assume, all race cars you can deform

The playable cars are all premium.

We have to question PD's thinking here, seriously.
Why on earth did they make 1000 cars, when 400 or even 300, hell even 200 is enough? They could have made 400 premium models instead of 800 standard models. Don't you agree that would've been much better?
I think I have majority on my side when I say I won't drive any of those 800 standard cars.
