As I said before, I have yet to hear
anyone, other than yourself (who has actually been there), who agrees with your view. If I had, I wouldn't have said it. Furthermore, as I've also said, I
have been to the Ring, so I am speaking from my own experience. I can't change what I have experienced. It just so happens that the majority of people I have come across are very disappointed in Forza's version of the ring, and tend to have the same experience. The topic of the rumble strips keeps coming up in all of these conversations to boot. Not to mention the track length, width, and probably one of the worst representations of the Karussell.
Nevertheless, I still enjoy hot-lapping/racing there. I just treat it like a "fantasy" version of the track. Still a fun track, just not all that accurate.
While using a DFP in GT4 I found the curbs to be quite scary, but didn't notice as much when using a controller. I haven't attempted, or been able to, give a similar comparison to other games.
GT4's curbs were decent, but you won't really get the full effect unless the game has fully 3D rumble strips complete with varying angles of the red and whites where applicable. All in all, they were also somewhat "dumbed" down in places. GTR Evolution has a pretty decent version.

That 'Ring vid makes me pine for dynamic night and day in GT5. Racing on the 'Ring with the sun low over the trees casting long shadows and the orange/red sky shining on the track
I have been dreaming of doing just that, ever since GT4 was released with a version of the famous track. The Ring, La Sarthe, and even the (previously) only night time Stage Route tracks. Imagine finally being able to see Stage Route 11 during the day, or trying to nail "The Corkscrew" on Laguna Seca with only your headlights to guide you. Incredibly good fun to be had.
