I think some features were intentionally left out of the show because the release of the game will present bombastic news to impress people who aren't sure on buying the game. It will be like a final showdown to make every PS3 owner buy the game. I believe this "final showdown" includes, among the full track list, Spa-Francorchamps, and an even better damage system (although I'm already satisfied with what we've been seeing).
If they had shown everything they have on TGS, everybody would be impressed now, but the game isn't out yet. If they impress people on the release, everybody will go out and buy the game. This is the so called "momentary hysteria effect".

I asked this question to SrRd_Racing and I would like to share with you guys: Since TGS is over, how does you rate the event as a whole?
We saw the fantastic weather effects, some car confirmations, returning tracks and a few surprises like the old VWs, but still, we didn't see rollovers, standard damage and customization, I would give it a 9/10, as I'm pretty satisfied with the bunch of info we had.
