Derek Bell actually jumps to my mind first, followed by Sir Stirling Moss, but Tiff, Rowan, May and Hammond, Jay Leno, or Patrick Long are also obvious choices. Murray Walker would do nicely as well. Sabine is a goddess and would be really great for the AMG Academy.

It's really, really, horribly unfortunate we can't have James Hunt, that would be EPIC. But it might give the game a more adult rating

I definitely think racing drivers are the best way to go: Allan McNish, Darren Turner, Jenson Button... Perhaps specific drivers for different categories of car, in the same way it was used in NFS Shift 2.
