At the release of GT5 RUF can be enough... but as soon as the contract with EA finish, they MUST put Porsche into the game as DLC... GT experience won't be complete without driving a Carrera GT and some old Porsche racing cars...
Microsoft asked EA for the license, upon agreement a huge amount of money flooded the EA offices. Money that SONY doesn't want to pay. Now, however, that Microsoft is close with Activision which forced EA to get comfier with SONY, the amount might come down.

I want RUF to stay, but (assuming there's no livery editor) I want some Dream Cars. A GT-spec RGT versus the JGTC and DTM cars seems mouthwatering. Call me biased but I'd rather have an RGT-R (speculative name) over a real Porshce GT3 RS

Sadly, Porsche can not be replicated. There may be tuning companies like Gemballa and 9ff who take Porsche bodies and tune them up to 900hp or something stupid but they all lack history, racing pedigree and, not to sound overly sentimental and soppy, 'soul'.
Porsches are without a doubt amazing cars that are full of history and soul, but RUF has a history and soul as well. Check out the first part of the RUF history here:

Personally, I'll be happy so long as RUF is still in the game. (I would however, love to see Porsche in GT5 of course. Especially I would like to see more of their low-powered / classic models. I would love to be able to use a 912/914/912E in many of the beginner races.)

Only thing that is in my mind is RAUH-Welt from Japan. They tune and customise all kind of Porsches and look great imo.
