Made my own Chicken Alfredo. Doesn't look the best but turned out delicious. I made enough for about 10 servings. Been eating this the last few days.

  • Alfredo sauce
  • Chicken
  • Mushrooms
  • Red potatoes
  • Mrs Dash chicken seasoning
  • Parmesan cheese
  • Broccoli

We needed to use up some Naan and I didn't feel like making an Indian dish so last night I made homemade pizza with Naan crust. Five minutes in the oven to dry the Naan out a bit, add topings, back in the oven for 5 minutes to melt the cheese.

Good idea. 👍

My wife had never heard of sunny side up eggs until she met me. She argued with me that I was talking about over easy until I showed her.

Exact same experience with my second wife. But, I I earned it from the first one. :)

Had Mung bean porridge for breakfast. I'm finding that's a bigger power-breakfast than the whole bacon-and-eggs spread.

Here's Mung beans before they're prepared. Just boil, and add milk and sugar to taste.

It's a little sad the juice cost twice the sushi. But 10 servings worth of veg is far easier to have this way than anything else, and the cayenne makes it delicious.

Last night we had a slow cooker brisket recipe that I got from the American Heart Association Website. Unfortunately, their homemade tangy sauce recipe was more tomatoey tasting than I liked. It was almost like a tangy ketchup.

But on top of the meat I laid some foil and placed carrots, parsnip, and broccoli to steam. Those were delicious.

Dinner last night was potato/cheese pierogis pan fried in butter and onions, and a couple links of kielbasa with horseradish.

Family went to Mexican Village last night so, naturally, I had a Pollo Fundido.

Large flour tortilla filled with chicken, deep-fried and covered with a zesty jalapeno flavored cream cheese. Served with refried beans and rice

Made this in case we'd lose power during the storm:

Now it's just lunch for a few days. Barilla ProteinPlus rotini pasta, arugula, olives, & orange, tossed with shrimp sauteed with shallots and pinot grigio, and a citrus vinaigrette with orange and lemon zest.

Homemade eggplant parmesan on a bed of gluten free black bean noodles.

Kentucky Pork Producers pork chop sandwich.

And then that night we had frozen yogurt for a fundraiser.

Interesting. Never heard of black bean noodles.
My wife can't have gluten and corn based pasta is vile so we tried a box of the black bean spaghetti from Costco. Fewer carbs, a surprising amount of protein and not bad taste/texture (slightly nutty flavor and firmer than normal pasta) means it's now what all of us eat. 👍

I will look for it later this week.

Homemade chili with sour cream and Cheddar cheese.

And for later, behold!

I was going to stick a bean can on top of it (I opened one for the chili), but when I looked in the garbage, it had sank too far into muck. So you will just have to take my word for it.

For those who don't know, here is the story.
