Tried a new recipe I found online for Chinese pork belly, and despite looking decidedly ropey for most of the cooking, it turned out really well...
I made my own version of Hong Shao Rou (pork belly) last night, and left it to simmer while I did the WTC 700 race at Le Mans (30 minutes).

Unfortunately, even though I left the lid on the pan, the gas was too high and the liquid reduced much faster than I anticipated. It was only when I got to the start of the final lap that I started to smell burning, and by the time I got through to it, the liquid (which is supposed to reduce down into a tasty, sticky glaze) resembled tar and it was pretty much ruined. I actually ended up salvaging most of it by rinsing it with boiling water to remove most of the burned glaze, but it wasn't great.

I should have known better - even when you are concentrating on it 100%, the difference between it turning out perfectly and turning out burnt is only a matter of around 20-30 secs, so leaving it unattended was really stupid. Oh well, I will know for next time.

It was Taco Tuesday and I grilled off a couple of marinated chicken leg quarters and a couple of ears of corn, chunked the chicken and made a salsa with the corn and black beans, red onion, cilantro, and lime juice. Had avocado and crema to top the tacos.

Also made flour tortillas for the first time and they were good but I need to get them thinner. Thankfully they were super fresh and soft so they didn't split when folded.
 
Nice delicacy! I'd love to eat that with triple pepperoni and tomato sauce.
That's exactly what I was thinking and what I said to my family while eating it. Luckily, I went to the grocery store and found that they were selling fresh mozzarella two-for-one, so I got two of them. I like experimenting with different cheeses, so I picked up a block of smoked gruyere as well.

I need to find a place that sells really good pepperoni.. I've yet to find one.

Chicken King Dosa... it looked amazing but it was really quite disappointing! There was only a very meagre portion of actual chicken in the centre of the dosa, the rest was just very thin bread. What chicken there was was also super-spicy - something like three green chillis for a very small portion, which made it too hot.

The service was also terrible. A couple of girls who ordered well after us were served before some of our party - in fact, the guy sitting opposite me didn't get his food for about 40 minutes, but which time we had all finished ours. The restaurant also didn't appear to have any toilet facilities either, and it was very expensive for the quantity (and quality) of the food. We got two plates of fried prawns for a starter, but the portions were not equal, so I got stiffed on that. My mate was still so hungry after his meal, he ordered another one, even though our other mate hadn't received his food yet! All in all it was really pretty shabby.
