I think GT5P was an evolution from GT4 (certainly they felt quite similar). Then for GT5 they rebuild the physics from scratch (that's why it took so long to come out). Then for GT6 AGAIN they rebuild the physics with the help of Yokohoma (tyre model) and KW (suspension model). Certainly they are getting better, but even in GT4 days PD is already left behind on console (Enthusia) and PC (rFactor). Even now 10+ years later with GT6 PD is still playing catch up. I have no doubt GTS/7 is going to improve, but I suspect it still won't touch the likes of AC.
The basic physics of GT is quite good to be honest, considering we are talking 1200+ cars here (dupes included, but still). I am surprised how similar the Shelby Cobra and Ford GT40 is in AC and GT. I always felt both of those cars feel a bit odd in GT, but apparently that's how it is. Also the R8 LMS with its twitchy snap oversteer in GT6 - it's present to some extent in AC as well. The problem with GT is suspension needs to be "freed" - currently it feels like there is a damping aid to prevent extreme oscillations, no doubt to aid pad users. Also tyre model needs to be more sophisticated (pressure and temperature modelling), currently it feels like a stiff block that just provides grip.
For FFB, the sense of weight transfer and grip is quite good, but it just lacks the fidelity and some of the more subtle cues of PC sims. Even compared to rFactor with RealFeel GT feels quite numb. Road feel is practically non-existent. I mean driving at the Nordscheleife in GT6 shakes my wheel less than driving at the pancake flat Silverstone in AC. I suspect track modelling is to blame though and it's not necessarily the fault of the way FFB is programmed.
