The actual driving we already know lots about. We know:
- car numbers, and most of the manufacturers, maybe PD still has one or two surprises, Maserati maybe?
- we have a good idea on what tracks are going to be in, at least around 10-15 of them anyway (although we don't know if theres going to be only 20 circuits/locations or a whole lot more, it all got lost in translation and is very vague).
- We know there is a real time damage engine in the making and it will most likely affect performance on all cars (although on road cars it will only be minor body damage as opposed to structural and bodywork damage like we have seen in demos)
- we know the physics and graphics are going to be awesome, naturally.
- The tuning, it seems pretty obvious to me there is going to be the same basic tuning we saw in previous games, maybe a little bit expanded in terms of weight reduction, and no adding turbos to cars that already have big turbos, like the Veyron for example.

Kaz mentioned aerodynamic adjustments, so we're talking possible bodykits diffusers, splitters etc. Or it could just be spoilers like in GT4, but i think we will get more than that. We can safely expect some form of modification that was not in GT4.
We don't know full track numbers, whether they're going to have point to point rally stages, whether more F1/open wheel cars will be put in the game. We know very little about the online other than private rooms and what we have to go on in prologue. Livery editor is unconfirmed. Its possible there is something in, but i doubt it will be as in depth as other racing games.
I'd say we actually know a lot about this game so far actually
