Personally, and this is my completely unfounded opinion, I think that PD has pretty much finished GT5 and is just waiting for a couple of things to happen.
1) GT5P sales should fall below a certain threshold. If enough people are still buying this preview-version, why not wait and do a little more work (more cars, tracks, etc) on the main game in the meantime? Once the sales drop, they'll be ready to go in no time.
2) Why should they announce a GT5 release date more than, say, 3 months ahead? From the moment it's announced they absolutely KILL GT5P sales with it and will not sell one game until the release of GT5 anymore. Therefore, the period between announcement and release needs to be very short. Steve Jobs simply got it right. PD does good to stick to that tactics.
3) Maybe, as a bonus, some exclusive manufacturer licenses run out while you wait. I don't think that would influence PD's release schedule though, unless the manufacturer was to be heavily featured in the game, like Ferrari was in GT5P.
Why I think that PD is finished with GT5 at all? Because there haven't been any updates on GT5P for, what, half a year? And of course you wouldn't put any effort in the demo, when basically all you wanted to test with it, has been tested. The effort has been gone completely into the final version for half a year, so I say get ready for an autumn release.
