Yes I imagine whoever made that body mod was trying to make it like this one. ;)
 
Back some years ago, those body mods were pretty popular on some of the pages that provided info about using gameshark codes in GT2. Those webpages are now offline and I actually know (or at least knew) how to access the data concerning the car bodies inside the games, but getting that kind of results is another story (it requires a lot of time). The most popular things were "convertible" mods of muscle cars (roof moved down) or huge rear wings (moving up the points of the wing.
Nothing got further than that, for what I know. If you want to try, you should make an attempt at the max speed test, then get the screen where you actually see your car spinning in a black environment and then, with a memory editor, find some lines full of "80" values in the memory (hexadecimal). After that lines you find a part of the memory which has to do with the body of the car. And there my knowledge stops, because the only things I managed to do is deforming in a totally unuseful way the bodies of some cars.
However they aren't really "secret" nor "hidden" things in the video game, they were quite rude attempts to manually make body mods.

I'm working on a rehash of my older youtube videos showing the beta car models in the GT2 demos. I so far have South City and a lot of North City finished. I started East City with Toyota as you can see here.

So yeah, there's some beta cars I apparently missed because I didn't think I wouldn't find anymore differences. I.E. The Dodge Avenger & Interpid for some reason have the same color options as the Challenger.

EDIT: There's one thing that puzzles me, why did PD replace the 1998 Team Oreca Viper GTS-R with the Canaska Viper GTS-R rather than just keep both?

I'd say that North, South, and West City are complete and now I just have to get East city done.
I should note that I attempted to find the Escort 1.8 GTI one more time in the game demos with one more trick I haven't tried, but alas. I was hit with another altezza placeholder. That car is just long gone.

I tried looking at the Mini Cooper Mk.1 in the earliest demo too just to see if it had a while color scheme like in that poster that was posted here pages ago. The game crashed when I tried to load the model. The 2nd demo though doesn't, but shows the Mk.1 Mini looking basically like it does in the final game.

Why would they put a pic of an open-wheeler Subaru 360 on a magazine?

The racing mod for the [R] '98 Toyota Starlet in the 2nd GT2 demo for some reason has 2 body codes. I used the codes for the racing modded vitz and a racing modded starlet showed up instead.

The game was at beta stages when the car pictures were taken, probably they wanted to show the current progress of the game. There are also many beta tracks that are only mentioned in that certain page. These are: The infamous Palm strip, North American Roadway (probably beta Indi), Eiger Path and the track that is depicted, well I have no idea which track it is...
Also, take some time and read the texts. On one of them, Kaz mentions the Celica XYR. In the very bottom on the right, he is talking about Drag Racing. Anyone who has the next pages from that magazine? Also, RUFs are mentioned as Modified Porsches, which is what they actually are. And in the VW category, there's the Polo G40 and the 1.4 mentioned

Also, I wish I could know the beta Ruf string codes. The final ones don't quite work on the demos.

Maybe Indi was going to be called North American Speedway, and it would have a road course named North American Roadway? Or it could be the track that is depicted. The mysteries will never be solved...
As for the RUF string codes, I have no idea how to see these ;-;. But, maybe we could find some more information on drag racing. And what better place to find information than an interview? I must find the next page from that magazine, anyone who knows which magazine it is?

That theory might make sense though, knowing that the track Cote d' Azur was called "Monte Carlo" in the game files (which is what the track was loosely based from)

You could be right except that maybe North American Roadway was a beta name for the Road course version of Indi. I mean, there is a road course of the track in real life. Still though, I think that course was just another planned race track to be honest.

Anyway, the name of the magazine is listed on the bottom of those pages; it's the "Official UK Playstation Magazine".

I can't find the certain issue anywhere on the internet :/ It always gives me modern issues.
