Let's see:
1 - 500 current gen cars. Diverse lineup so that I don't need Standard Cars to enjoy the game and I don't notice their absence should they be gone from the game.
2 - Bigger grid sizes, looking for the right compromise between quality of detail and grid. This is a racing game, not a "Photograph That Lug Nut!" game.
3 - More tracks than ever, but most importantly, different tracks as opposed to different layouts of the same track. I'd rather have three different tracks than three different layouts of the same track, it just gets boring after a while to see the same scenery over and over again.
4 - A fantastic off-line Career Mode, with many events, different regulations, and so on.
5 - Rules and penalties.
6 - Good AI (wishful thinking) that makes me want to improve, as opposed to "JUST DRIVE A WORSE CAR BRO" difficulty.
7 - More in-depth customization system, including livery system.
8 - Good Course Maker that gives us ability to import and export assets, like meshes and textures.
All of these sans point 7 & 8 should have been part of GT5 to begin with, in my opinion, to live up to Gran Turismo 4.
And to reiterate, once again: gives us a good Career Mode for a change, PD. Grinding is the worst part of Gran Turismo, it has always been. Back in GT4 and the Rally races at Costa Di Amalfi to get that Toyota rally car which you could sell for 265K, grinding is the one thing that tells you "something is very, very wrong with this game".
We should be able to buy what we want without resorting to grinding all the time. But it doesn't help that the AI is awful and we can't even enjoy racing sometimes.
