I would assume, it is something what separates those cars from the rest of strings found in the code. As in, other mentioned cars basically have no connection to GT7 and most likely just leftovers, but the cars from this list have some GT7-specific attributes attached to them.
GT3M_XX or GT4M_XX can easily mean a fictional Gr. 3 or Gr. 4 version. So anyway, here's the complete list of new cars coming (eventually):

Please no. We need something else. I’d rather an official Supra GT4 with the full race interior, than that Gr.3 version.
Since the OVS cars were event-only cars in vein of the GT Academy versions of some Nissan cars in the PS3 era, I don't expect that to return either.

I pointed out somewhere that the GR Supra N24 could benefit from GT Auto roll cages available for the road car.
This was not in the original leak.
The ticket exploit was a bug in the game code, so needed to go through all of the QA required for an update. The online dealerships are just some data downloaded from a server on startup and don't need a game update. That's why there's not a constant stream of patches to handle the dealership changing, and why a quick turnaround is possible - no files in the game itself change.
Perhaps preparing them for the physics engine? Or as @Whistle Snap said, that they’ve got the physics implemented for those cars.
